  • Description: This paper aims at examining the contribution of personality traits which could influence consumer's health-enhancing food consumption. Based on experiential paradigm and social psychology concepts, a literature review allowed specifying personality variables which might affect consumption experience. An exploratory and qualitative survey through consumer diary was carried out in order to verify research proposals. The results showed that desirability of control, innovativity as well as optimism and self-consciousness might influence the health-enhancing food value in consumers' perception.
