  • Description: Rapid detection of food chemical hazard is highly demanded today since traditional analytical methods are time‐consuming and labor‐intensive. The emergence of the high throughput microfluidics “lab‐on‐a‐chip” technology provides the potential for fast, accurate and portable detection of a variety of food chemical hazards. This chapter first introduces the fundamentals of microfluidics, and then reviews prevalent microchip fabrication and microfluidic detection technologies. In the end, the chapter summarizes recent achievements using microfluidics “lab‐on‐a‐chip” devices for food chemical hazard detection and lists several future directions in this dynamic field.
