  • Description: The sociological understanding of taste is strongly marked by the theory of Pierre Bourdieu, who made it one of the key areas in the cultural analysis of class differentiation. This article is an attempt to rehabilitate the meanings attached to the taste of necessity perceived in relation to the taste of luxury as a lack. Giving voice to the representatives of dominated classes speaking about their culinary tastes and practices, I try to show that taste of necessity is governed by its own logic and system of norms, which remains undervalued due to its illegitimacy. The hierarchy of meanings associated with taste is often reinforced by the researchers themselves, treating dispositions of habitus as permanent properties of subjects. I also attempt to demonstrate that, depending on the exposure to certain experiences and the character of practices of which taste is a part, preferences can be shaped independently of habitus.
