  • Description: PURPOSE: A method for manufacturing grain wine using a paper mulberry extract is provided to improve functionality because the extract contains active ingredients. CONSTITUTION: A method for manufacturing grain wine using a paper mulberry extract comprises the steps of: collecting and washing paper mulberry stems; simmering the paper mulberry stems and peeling paper mulberry stem barks to obtain stalks of the paper mulberry; heating the stalks and preparing a paper mulberry extract; mixing non-glutinous rice powder, nuruk (fermentation starter), and the paper mulberry extract and fermenting to prepare crude liquor; mixing the crude liquor, the non-glutinous rice powder, and the paper mulberry extract and fermenting to prepare a primary deotsul (additional liquor); mixing the non-glutinous rice powder, hard-boiled glutinous rice, and the paper mulberry extract and fermenting to prepare a secondary deotsul; and filtering the secondary deotsul.
